For almost seventy years, the same sign, in the same street, in the heart of Florence.

Our story

It all begins in Via del Giglio

Trattoria La Madia opened in 1956 in Via del Giglio, a few steps from San Lorenzo. It has never moved since.

Those were the years when restaurants in Florence were opened to feed the people who worked in the centre: a few tables, an open kitchen, the dishes of the day written by hand. The city around us has changed enormously and the neighbourhood has filled with visitors from all over the world, but the way we live in this dining room has stayed the same.

Nothing is left to chance: the rustic, intimate rooms, the soft lighting, the paintings on the walls that tell the story of Florence, the warm colours of the furniture and of the dishes we bring to the table. As soon as you walk in you can tell this is a place that feels like home, not one designed at a drawing board.

Because it is family run, the Florentine culinary tradition has never been broken here: the recipes have not been rewritten, they have simply been handed down.

The name

What a “madia” is

In the houses of the past, the madia was the wooden kitchen cupboard: bread was kneaded inside it and kept there, protected, for the whole week. There was no Tuscan farmhouse without one.

A name that says it all: bread, hands, and home cooking.

Family run

The restaurant is run by a family, not by a chain. The people who welcome you in the dining room and the people who cook are the same ones who choose the suppliers and decide what goes on the table.

Ingredients chosen by hand

Every ingredient that ends up in our dishes is selected personally by our chef. No shortcuts: that is where the flavour begins.

Home-made wherever we can

The bread and the schiacciata come out of our own oven. The desserts — tiramisù, fruit tarts, torta della nonna — we make ourselves, the way it has always been done.

The cooking of always

Ribollita, pappa al pomodoro, pappardelle with wild boar sauce, Florentine T-bone steak: the recipes of the Tuscan tradition, served the way our grandmothers made them.
